Beef Processing Dates, 2021

Due to the effects of Covid 19, it was been very difficult to book slaughter dates in 2020.  We make arrangements with the processor about 3 weeks in advance, so it really helps us plan if customers book ahead of time.  Turnaround is about 4 weeks from slaughter to cut/wrap/box/freeze, and shipping (if applicable).  We are taking deposits for quarters, halves, and whole beef from April to November 2021.

Our last few steers are quickly getting booked into Freezer Camp, so we recommend placing your deposit soon.

Lamb Slaughter Dates, 2021

Due to the effects of Covid 19, it was been very difficult to book slaughter dates in 2020.  We make arrangements with the processor about 3 weeks in advance, so it really helps us plan if customers book ahead of time.  We are taking deposits for half and whole pasture-raised lamb now.  Lambs will be ready for butcher in June and throughout 2021.  Lambs are not dry-aged for very long, so they are usually available for pickup or shipping within a week to ten days after slaughter.

Pork Processing Dates, 2021

We have a jolly group of pigs that are ready for freezer camp.  They are available by the half, whole, or quarter already cut and wrapped.  They spent the winter eating nice green hay, our custom pea-based grain ration, and fruit and vegetable scraps, and will be about 200 lb hanging weight.  To reserve a quarter (about 90 lb), half (about 150 lb), or whole pig (about 280 lb), go here.
